Ingredients:
Striploin, about 5 lbs/2,3 kg
Salt and pepper
For the sauce:
3-4 tablespoons/50-60g melted butter
1,5 tablespoon honey
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
1 tablespoon fresh thyme
- Sear the meat well on all sides, place it on a rack tray and spread a third of the sauce on top of the meat.
- Roast in a preheated oven, fan on 375F/190C for 8-9 minutes.
- After that time take the roast out and spread half of the remaining sauce on top and roast again for 8-9 minutes.
- Again, after that time take the roast out and spread all that is left from the sauce on top.
- Turn off the oven fan, stick a thermometer in the middle of the roast, set to your desired doneness, mine was set to 133F/56C and put the roast back in the oven.
- You can cover the roast with cooking foil, when you like the color of the crust and continue cooking until it reaches the desired internal temp.
- If you want the meat more red, set the thermometer to 129F/54C, if you want it more done set it to 136,5F/58C.
