Stir Fry Pasta With Turkey Recipe

  • Blend red bell peppers, tomatoes, onion, and Scotch Bonnet pepper using a chopper.
  • Set the blended mix aside.
  • Use turkey (or chicken as an alternative).
  • Remove skin and bones, cut the meat into bite-sized pieces, and save the scraps for future meat stock.
  • Season with salt, garlic powder, onion powder, paprika, chicken stock cubes, and pepper. Let it marinate.
  • Slice red and green bell peppers, carrots, and onions into thin slices.
  • Mince garlic and optionally add mushrooms.
  • Fry turkey in batches to avoid overcrowding the pan, which prevents proper browning.
  • Alternatives include using an air fryer, oven, or grill for a healthier option.
  • Sauté onions and garlic, then add the blended pepper mix.
  • Cook the mix to eliminate the sour taste of tomatoes, seasoning with salt, chicken seasoning cubes, and pepper. Fry for about 10 minutes.
  • Boil spaghetti in salted water for about 6 minutes or until al dente.
  • Save some pasta water before draining.
  • Mix the fried turkey, cooked pepper mix, and vegetables. Stir fry for 3-4 minutes to cook the veggies slightly.
  • Add cooked pasta and reserved pasta water (or regular water) to blend everything.
  • Stir until the pasta absorbs the sauce.
  • Serve and enjoy!
