Ingredients –
300g (10.5 Ounces) – Spaghetti ( I use Barilla no.5)
1/3 Cup (80ml) – High Quality Olive Oil
6 – Cloves of Garlic, Thinly Sliced
1/4 Bunch (10g) – Flat Leaf Parsley, Finely Chopped
1 tsp (1g) – Dried Chilli Flakes
Seasoning to Taste
Traditionally this recipe isn’t served with and cheese but by all means add some freshly grated Parmesan to top this off.
Instructions:
- Bring a saucepan of water to a boil and add sea salt. Add spaghetti and cook for 7 minutes (2 minutes less than package instructions).
- In a cold skillet, pour olive oil and add sliced garlic. Cook on high heat, stirring constantly until garlic just begins to sizzle (about 1 minute), but do not let it brown.
- Once pasta is 75% cooked, carefully add pasta water to the skillet and let it bubble for 30 seconds to create an emulsion.
- Add cooked pasta to the skillet with some reserved pasta water. Stir well until pasta is coated in the garlic-oil sauce.
- Stir in chili flakes (if using), salt, black pepper, and chopped parsley.
- Toss everything together and serve by twisting pasta into bowls. Enjoy your simple, flavorful Spaghetti Aglio E Olio!
