Ingredients
500g carrots, peeled and cut into 2-inch sticks Or baby carrots
2 tablespoons olive oil
1 tablespoon honey or maple syrup (optional for sweetness)
1/2 teaspoon salt I used Rosemary salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon fresh thyme or rosemary, chopped (optional)
Fresh parsley, chopped (for garnish)
Preheat the oven to 200°C (400°F).
Roast for 25–30 minutes, flipping halfway through until the carrots are tender and slightly caramelised.
