These bite-sized goodies are simple to make at home and always disappear fast at family gatherings or holiday celebrations. Making a batch of Newfoundland snowballs is a fun way to add a touch of cozy tradition to your kitchen.
2 ½ cup quick cooking oats
1 cup unsweetened coconut + 1 cup for rolling
1 ⅓ cup sugar
½ cup evaporated milk
½ cup salted butter
1 teaspoon vanilla
½ cup cocoa powder
1. Add the sugar, cocoa powder and butter to a pot.
2. Turn the heat to medium to melt the butter, continue to stir until you get one smooth mixture.
3. Add the milk and vanilla, then bring the mixture to a boil and cook for one minute,
4. Add the oats and coconut and stir until combined, cook the mixture for a minute.
5. Turn off the heat and leave the snowball mixture in the pot to cool,
6. Once the mixture has cooled enough to handle, scoop out snowballs with a cookie scoop, roll into a ball and immediately dip the snowball into finely shredded unsweetened coconut. You can eat these right away or store them in the fridge or freezer.
