INGREDIENTS:
Cottage cheese 150 g.
Coconut flour 25 g.
Egg 1 pc.
Baking soda 1/3 teaspoon.
Berry sauce:
Frozen Berries 2 cups.
Lemon juice 1 tablespoon.
Sweetener to taste (I used 1 tablespoon stevia).
Total per 100 grams:
Calories – 164.25 kcal.
Protein – 16.15g.
fat – 7.54 g.
Carbohydrate – 7.73 g.
These pancakes are incredibly tender and fluffy! With berry sauce and yoghurt mmm… delicious.
Cook berries, lemon juice and stevia until it starts to thicken.
While the berry sauce is cooling, prepare the pancakes.
Mix cottage cheese, egg and a pinch of salt.
25 g coconut flour (~1 tablespoon).
Immediately add 1/3 teaspoon of baking soda.
Coconut flour is very hygroscopic. The dough will be thick.
If you have a non-stick pan, great, you don’t need oil.
Fry the pancakes on both sides over very low heat until cooked. This is the most delicate!
