1 medium zucchini cut into 1/2-inch rounds
2 teaspoons olive oil
1/2 cup Italian bread crumbs, gluten-free if needed
1/4 cup parmesan cheese
1 egg
1/3 cup white whole wheat flour
1/4 teaspoon garlic powder
1/4 tsp sea salt
1/8 tsp black pepper

Instructions

Preheat oven to 425 degrees Fahrenheit. Lightly grease a rimmed sheet pan with olive oil and set aside.

Combine breadcrumbs and parmesan cheese in a medium, shallow bowl. Whisk the egg in a separate bowl. In a third bowl, combine flour, garlic powder, salt, and pepper.
