Ingredients
• 1 tablespoon olive oil
• ½ medium white or yellow onion, diced
• 4 cloves garlic, minced
• 30 ounces fire-roasted diced tomatoes
• 1 cup chicken broth
• ½ teaspoon salt
• ¼ teaspoon black pepper
• 12 large fresh basil leaves, roughly chopped
• ½ cup heavy cream
Instructions
Heat olive oil in a large saucepan over medium-high heat. Add in the diced onion and saute for about 5 minutes until soft and translucent.
Stir in garlic and cook 1 minute. Add in the diced tomatoes, chicken broth, salt, and pepper. Bring it to a boil and simmer for about 10 minutes.
