LEMON GARLIC CHICKEN - Quick & Easy Dinner Recipe!
INGREDIENTS
For the chicken marinade
2 lemons
1/4 cup extra virgin olive oil
5 large garlic cloves, crushed or minced
1 1/2 teaspoons Italian seasoning
1/2 teaspoon red pepper flakes (optional)
1/4 cup chopped Italian parsley, plus more for garnish
For the chicken
2 pounds boneless skinless chicken breasts
Kosher salt
Black pepper
Olive oil
DIRECTIONS
- Zest a whole lemon and squeeze out the juice, setting both aside.
- In a mixing bowl, combine the lemon zest, lemon juice, minced garlic, Italian seasoning, red pepper flakes (if using), and chopped parsley.
- Add 2-3 tablespoons of extra virgin olive oil to the mixture and stir well. Season with a pinch of salt and pepper.
- Season the chicken cutlets with salt and pepper on both sides.
- Place the chicken in the marinade, ensuring each piece is coated evenly. Let it marinate for at least 30 minutes (or up to 2 hours if possible).
- Heat a large skillet over medium-high heat and add 1-2 tablespoons of extra virgin olive oil. Wait until the oil is shimmering.
- Carefully place the marinated chicken in the skillet, making sure not to overcrowd.
- Cook for about 3-5 minutes on each side, depending on thickness, until the chicken is golden brown and cooked through. Avoid flipping too soon to keep the chicken juicy.
- Optionally, add a bit of the leftover marinade to the skillet to boost flavor.
- Once the chicken is done, sprinkle with fresh parsley and garnish with lemon slices in the skillet for a pop of color and extra lemony flavor.
