Ingredients:
2 1/2 lbs (1 kg) floury potatoes – such as maris piper, peeled and chopped into large chunks
3 tbsp butter
3 tbsp double heavy cream)
large pinch of salt and pepper
2 1/2 cups (600ml) full fat milk
2 boneless salmon fillets
1-2 boneless cod or haddock fillet
15 king prawns shrimp these can be cooked or raw (make sure they’re de-veined)
2 tbsp plain/all-purpose flour OR 2 tbsp cornflour mixed with 2 tbsp cold water for gluten free
1 1/2 cups (150g) packed grated mature cheddar cheese

Instructions:
- Preheat your oven to 200°C (400°F).
- Boil the peeled and chopped potatoes in a large pan of cold water.
- Bring to a boil and cook for about 15 minutes or until fork-tender.
- Drain and mash the potatoes (a potato ricer gives the smoothest result).
- Stir in the butter, cream, salt, and pepper. Set aside.
- In a large saucepan, add milk and gently place in the salmon and cod fillets.
- Bring to a boil and poach for 3 minutes.
- If using raw prawns, add them in the final minute.
- Remove fish and prawns from the pan. Flake the fish and discard the skin.
- Save the poaching milk — this will be used in the cheese sauce.
- Place the flaked fish and prawns into a baking dish.
- If using cooked prawns, add them now.
- In the same pan, melt butter over medium heat.
- Stir in flour and cook for 1 minute to form a roux.
- Slowly add the reserved milk, stirring constantly (avoid whisking to prevent frothiness).
- Once thickened, stir in the grated cheddar cheese and remove from heat.
- Pour the cheese sauce over the fish mixture in the baking dish.
- Spoon mashed potatoes on top and use a fork to rough up the surface.
- Sprinkle with extra cheddar cheese.
- Bake for 15–20 minutes until the top is golden and slightly crispy.
- Serve hot with steamed peas or buttered green beans for a full comfort meal.
