INGREDIENTS
8oz/225g filet mignon
30g unsalted butter
1 tsp vegetable oil
3 garlic cloves
2 sprigs of rosemary
2 sprigs of thyme
Salt
Black pepper
METHOD
1. Pat dry the steak with a paper towel to create a brown crust
2. Season with salt and black pepper – rubbing it in on all sides!
3. Leave to rest at room temperature for 30 minutes to allow for a more even cook
4. Crush and peel 3 garlic cloves
5. Preheat oven to 220c/440f
6. Vegetable oil in a cast-iron skillet on a medium-high heat
7. Sear each side for 1 minute until a nice even crust (place the steak on a new part of the pan when turning over)
8. Roll the steak around to completely sear it
9. Lower the heat and add butter, rosemary, thyme and garlic
10. Baste for 1-2 minutes
11. Put in the oven for 6 minutes for medium-rare
12. Remove from the oven
13. Leave to rest for 5 minutes
14. Season with salt and black pepper
Internal temperature with a meat thermometer/time in the oven
120-125 °F (48-51°C) / 5 minutes for rare
130-135°F (54-57°C) / 6 minutes for medium-rare
135-145°F (57-62°C) / 7 minutes for medium
145-155°F (62-68°C) / 8 minutes for medium-well
155°F+ (68°C+) / 10 minutes+ for well-done
