How To Make Starbucks Egg Bites At Home
Ingredients:
10 eggs
1 cup shredded gruyere, swiss, or cheddar
1/2 cup full fat cottage cheese or cream cheese
¼ teaspoon kosher salt
Couple cracks of fresh black pepper
4-5 slices of sugar free bacon
Instructions:
- Preheat your small oven to 400°F for crisping up the bacon.
- Line a baking tray with parchment paper and place your bacon slices on it. Set it aside while the oven preheats.
- Place the bacon in the preheated oven (about 400°F) and cook for 13-15 minutes, or until crispy.
- Once cooked, transfer the bacon to a paper towel-lined plate to drain excess grease. Chop it into small pieces and set aside.
- In a separate large oven-safe dish, add some water (about 1-2 inches deep) and place it on the bottom rack of your oven. This will create a humid environment to gently cook the egg bites.
- Preheat your oven to 350°F for the egg bites.
- In a blender, crack 10 eggs and add 1 cup of grated cheddar cheese, ½ cup cottage cheese, a pinch of Celtic salt, and a few cracks of black pepper.
- Blend until the mixture is smooth and fluffy. You can also use a hand mixer if preferred.
- Use avocado oil spray to generously grease your muffin tin. Make sure the tin is non-stick or use a ceramic one for the best results.
- Pour the egg mixture into the muffin tin, filling each cup about ¾ full.
- Top each egg bite with the chopped bacon pieces (or sautéed mushrooms if you’re substituting).
- Carefully place the muffin tin in the oven, making sure it’s sitting over the water bath you set up earlier.
