Deviled Egg Pasta Salad With Pickles
Ingredients:
• 8 oz elbow macaroni
• 12 hard boiled eggs
• ¼ cup chopped dill pickle
• 1 cup thinly sliced celery
• ½ cup thinly sliced red onion
• ¼ cup cider vinegar
• 1 teaspoon sugar
• ½ cup mayonnaise
• 3 tablespoons Dijon mustard
• ½ teaspoon smoked paprika
• Salt & pepper to taste
Directions:
1. Hard boil 12 eggs and cook the macaroni according to the package
2. Halve all the eggs and separate the yolks from the whites. Coarsely chop the egg whites and set aside. Mash the egg yolks with a fork and set aside.
3. Drain the macaroni when it’s done cooking and rinse with cold water.
4. In a small saucepan combine the onion, vinegar, and sugar. Bring to a simmer and remove from heat and set aside.
5. To make the dressing: combine the egg yolks (mashed) and add the mayo, Dijon mustard, and vinegar mixture. Mix well. Stir in the paprika and salt & pepper to taste. Set aside.
6. In a large bowl combine the macaroni, celery, pickles, and egg whites. Add in the dressing mixture and stir it well. Cover and chill until ready to serve.

8 ounces macaroni pasta (any small cut pasta can be used)
¾ cup mayonnaise
1 teaspoon white wine vinegar
1 tablespoon Dijon mustard
2 tablespoons chopped red onion
2 tablespoons finely chopped celery
2 tablespoons chopped green onion
¼ cup cooked chopped bacon (2-3 pieces)
½ teaspoon salt
¼ teaspoon pepper
