Ingredients:

Dry Ingredients:
1/2 cup flour
1/2 cup corn meal
1/4 cup white sugar
2 teaspoons baking powder

Wet Ingredients:
14 oz canned creamed corn
14 oz canned corn kernels drained
3/4 cup sour cream
8 tablespoons salted butter melted
2 eggs lightly beaten
1 jalapeño deseeded and chopped finely
Pinch salt and pepper

Instructions:

  • Preheat the oven to 325F. Grease a 9×9 baking dish.
  • Mix flour, corn meal, sugar and baking powder together.
  • Stir in the drained can of corn, can of creamed corn, sour cream, melted butter, eggs and the finely chopped jalapenos. Give it just a pinch of salt and pepper.
