Ingredients
For the Chicken:
- 4 large chicken breasts
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp sweet paprika
- Salt, to taste
- 20 cracks of black pepper
- 2 tsp (10 mL) olive oil
For the Bacon (optional but recommended):
- 300 g streaky bacon
For the Caesar Dressing:
- 180 g (¾ cup) low-fat mayonnaise
- 1 clove garlic, minced or microplaned
- 20 g Parmesan cheese, grated
- 6 anchovy fillets, chopped
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 1 tbsp lemon juice
- Salt & 10 cracks black pepper
For the Wraps:
- 1 baby cos/romaine lettuce, washed and thinly sliced
- 5 large low-fat high-protein tortillas
Instructions
- Prep the Chicken:
- In a large bowl, coat chicken breasts with onion powder, garlic powder, paprika, salt, and black pepper.
- Heat olive oil in a high-rimmed pan over medium-high heat. Sear chicken for 3–3½ minutes per side until golden.
- Transfer to a 200 °C (390 °F) oven for 14 minutes.
- Cook the Bacon:
- Lay bacon on a parchment-lined tray (can overlap slightly). Bake in the oven alongside the chicken until crispy (~13–14 mins).
- Make the Caesar Dressing:
- In a bowl, combine mayonnaise, garlic, Parmesan, anchovies, Dijon mustard, Worcestershire sauce, lemon juice, salt, and black pepper. Mix well and refrigerate until ready to assemble.
- Prepare the Lettuce:
- Thinly slice and wash the romaine/cos lettuce.
- Slice & Tear Protein:
- Let chicken rest for 5 minutes, then tear into bite-sized strips. Slice or tear bacon.
- Assemble the Filling:
- In a bowl, mix chicken, bacon, shredded lettuce, and ⅔ of the Caesar dressing. Adjust seasoning with black pepper.
- Fill the Wraps:
- Spread remaining dressing on each tortilla. Divide filling evenly among 5 wraps. Fold sides in and roll tightly.
- Store & Serve:
- Wrap individually in parchment paper or store in airtight containers. Refrigerate for up to 3–4 days. Best eaten cold — no microwave needed!
Tips:
- Want smaller wraps? Divide filling into 8 tortillas and recalculate macros.
- Skip bacon to reduce sodium and calories, or swap for turkey bacon.
