This chicken, rice, and broccoli casserole is a healthy and easy-to-prepare dish that is perfect for a weeknight meal.
It is made with chicken thighs, basmati rice, spices, and a yogurt marinade for the chicken.
The casserole is baked in the oven until the chicken is cooked through and the rice is fluffy.

Rice Ingredients:
1 ½ cups Basmati rice, rinsed and drained
2 ¼ cup chicken broth
½ red bell pepper, super fine dice
½ yellow onion, super fine dice
4 baby bella mushrooms, clean, super fine dice or you can leave bigger slices.
1tsp. Dried parsley
1 tsp. Dried basil
1 tsp. Salt
1 Tbsp. butter, grass fed if you have it
1 Tbsp. olive oil
Chicken Marinade Ingredients:
5-6 chicken thighs, boneless skinless
⅓ slightly heaping cup plain greek yogurt
¼ cup olive oil
½ tsp. Dried Thyme
1 tsp. Tarragon
1 ½ tsp. paprika
½ tsp. Garlic powder
½ tsp. Salt
1 bunch of organic broccoli, cut into florets
Directions:
Preheat the oven to 400 Degrees F.
Place all of the marinade ingredients except for the chicken in a medium size bowl and mix well. Then add the chicken and stir to coat. Cover the chicken and place in the refrigerator for at least 1 hour, 2 or 3 hours would be even better.
In a large frying pan over medium heat, add the olive oil and butter. Once hot, add the diced onion, bell pepper, and mushrooms to the pan. Saute, stirring occasionally for about 7 minutes or until softened and translucent.
In a 9 x 13 baking dish, combine all of the rice ingredients including the onion mixture and stir well. Then lay the marinated chicken thighs on top of the rice. Any leftover yogurt sauce should be spread over the top of the chicken pieces. We don’t want to waste a drop of that delicious sauce!
Cover the baking dish with foil and place in a 400 degree F. oven for 30 minutes. Remove the foil and add the broccoli by placing the florets all around the dish. Place the chicken and rice back in the oven for an additional 15 to 20 minutes or until the rice is cooked through and fluffy.
