Ingredients:
• 1 box rotini pasta (16 oz)
• 1 15 oz can corn, drained
• 1 15 oz black beans, drained
• 1 can sliced black olives, drained
• ⅓ cup red onions, chopped
• 1 package cherry tomatoes
• 1 avocado chopped (cover with lime juice)
Dressing
• 2 large avocados(*maybe add one more avocado)
• 2 TBSP sour cream (*Add more sour cream)
• 1 lime, juiced
• ½ cup cilantro
• ½ tsp garlic powder
• 1 jalapeno, seeds removed
• ½ cup buttermilk
• 1tsp ground cumin
• Salt & pepper to taste
Directions:
• Cook pasta according to package directions. Drain and rinse with cold water and let it sit.
• In a blender, place all of the dressing ingredients. Cover and blend until well combined.
• Pour the avocado mixture over the pasta mixture. Stir to combine.
• Toss diced avocado with lime juice, and add in pasta along with other mixings (black beans, black olives, onions, cherry tomatoes) and mix in with dressing until well combined. Refrigerate for an hour before serving.
