Here’s what you’ll need:
1 and 1/2 cup sugar (300g)
3/4 cup unsalted butter (180ml)
3 tbsp oil (45ml)
3 large eggs
1 tsp vanilla (5ml)
2 and 1/4 cup all purpose flour (280g)
1 and 1/2 tsp baking powder (7g)
1 tsp salt (5g)
1/2 tsp cinnamon powder (2g)
3/4 cup milk (187ml)
1 and 1/2 cup diced apples
1 cup pecan nuts
For the caramel:
1 cup sugar (200g)
1/4 cup butter (55g) unsalted
3/4 cup heavy cream (190ml)
1/4 tsp salt
Method:
1. Preheat oven at 170C/340F. In a bowl mix together sugar, butter and oil. Add eggs one at a time, mixing after every addition. Then add vanilla.
2. Sift in flour, baking powder, salt and cinnamon powder in two additions. Mix to combine. Don’t forget to scrape sides and bottom. Then add milk. Mix until incorporated. Then add diced apples and pecans. Mix.
3. Brush a 10-cup bundt pan with butter and dust with flour. Make sure to cover all sides and crevices then tap the excess flour. Pour batter.
4. Bake for 55 to 60 minutes or until toothpick comes out clean when inserted.
5. Let it cool down.
6. Top with homemade or store bought caramel sauce and coarsely chopped pecans.
