Instead of using store-bought ground chicken, you chop the fillets yourself, which gives the meatloaf an amazing texture and juiciness.

Ingredients:
2 chicken fillets
1/2 tsp of dry garlic
1/2 tsp of paprika
Fresh parsley
1/2 Lb cheese (about 200 g)
1/2 lb Champignon mushrooms (about 200 g)
oil, a piece of butter
12-14 slices bacon
2 tbsp mayonnaise
1 tsp Dijon mustard
1/2 tsp of Provencal herbs
Salt and pepper to taste.
Instructions
1. Prepare the chicken
- Finely chop the chicken fillets with a sharp knife (freezing the chicken briefly makes cutting easier).
- Place chopped chicken in a bowl.
- Season with salt, black pepper, dry garlic, and paprika.
- Add chopped parsley or cilantro.
- Mix thoroughly and set aside.
2. Prepare the filling
- Grate cheddar cheese and set aside.
- Heat oil and butter in a pan.
- Add chopped mushrooms and fry over medium heat.
- Season with salt and pepper; cook until liquid evaporates. Let cool slightly.
3. Assemble the roll
- Lay out a sheet of foil and place parchment paper on top.
- Arrange bacon slices side-by-side in a rectangular layer.
- Spread the chicken mixture evenly over the bacon, pressing it down firmly.
- In a small bowl, mix mayonnaise, Dijon mustard, and Provencal herbs.
- Spread this sauce evenly over the chicken layer.
- Sprinkle grated cheese across the surface.
- Add the sautéed mushrooms along one edge.
- Carefully roll everything into a tight log, using the paper as support.
4. Bake
- Wrap the roll tightly in foil.
- Bake at 180°C (350°F) for 30 minutes.
- Remove from oven, unwrap foil, and brush bacon with the released juices.
- Return uncovered to the oven for another 15 minutes, until golden.
