ENERGY BALLS RECIPE | carrot cake protein bites

INGREDIENTS

1/4 cup creamy roasted almond butter
1/2 cup rolled oats
1 scoop (30g) vanilla whey protein powder*
1/4 cup shredded carrots
2 tablespoon raisins
2 tablespoon walnuts
2 tablespoon shredded coconut
1 tablespoon honey
1/4 teaspoon cinnamon
a pinch each nutmeg + ground ginger

Carrot Cake Energy Balls Recipe

INSTRUCTIONS
Combine all ingredients in a food processor and blend until well combined. The consistency will be similar to sand.

Grab about 1 tablespoon of the mixture and squeeze it in your palm to make it stick. Then, form it into a ball. Repeat until you have 10 balls.

Place all balls on a rimmed baking sheet lined with parchment paper and chill in the fridge for one hour. Transfer to an airtight container and leave in the fridge until ready to enjoy!

NOTES
*If you don’t want to use protein powder, skip it and add an extra 1/4 cup of oats.

STORING ENERGY BALLS:
In the fridge: Energy balls are stored in an airtight container for up to 3 weeks.
In the freezer, You can store these energy balls for up to 3 months. If they get too hard, let them sit at room temperature for 5-10 minutes before eating.
