Oven Baked Chocolate Donuts (made with oats, no flour!)

(Makes 11 donuts)

Ingredients:
2 cups ground oats (200g)
1 tsp baking soda
1/2 tsp salt
1/2 cup cocoa powder (50g)
2 eggs
1/4 cup coconut oil (50g)
1/2 cup honey, maple syrup or agave (170g)
2/3 cups yogurt (160g)
1 tsp vanilla extract

COCOA POWDER GLAZE:
1/4 cup cocoa powder
1/4 cup coconut oil
2 tbsp honey (maple syrup or agave)

PEANUT BUTTER GLAZE:
1/4 cup peanut butter
2 tbsp coconut oil

Simple Baked Chocolate Donuts Recipe

Preparation:

In a large bowl, add the ground oats, baking soda, salt and cocoa powder. Mix until it’s well combined.

In another bowl, add the eggs, melted coconut oil, honey (maple syrup or agave), yogurt and vanilla extract. Whisk until completely combined.

Add the ground oats, cocoa powder and baking powder. Gently fold until you get a smooth and shiny batter.

Add the wet ingredients into the dry ingredients and gently mix until just combined. Don’t over-mix the batter, your donuts won’t be as fluffy as they should be.

Transfer the batter into a piping bag or ziploc bag, cut off the corner, and pipe the batter into the previously greased donut pan. Don’t overfill the molds, or you’ll lose the classic donut shape.

Bake for 8–10 minutes at 350°F (180°C), or until a toothpick comes out clean.

Let it cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Dip the donuts into the glaze and place them back on the wire rack to set.
